Power Breakfast: Huevos Mexicanos

Ingredients:
• fresh tomato (one medium per person)
• fresh scallions  (one-two per person)
• fresh jalapeno peppers (to taste)
• eggs (one-two per person)
• olive oil (a dollop will do ya)
• tortillas (two or three per person)
• orange juice
• coffee

Optional: fresh cilantro, hot sauce, avocado slices

Chop up the tomatoes, scallions and peppers.  Sauté them in olive oil until they're a red, soupy mass.  Beat the eggs in a bowl and pour them into the pan.  Scramble until set.

Heat up the tortillas over a burner--if you have a gas stove you can just plunk them right on top of the flame, a few seconds per side.  Be careful not to burn yourself.  Put the eggs into the tortillas taco-style.  Garnish with cilantro and/or hot sauce and avocado.

Eat with coffee and orange juice, since the peppers will completely overpower a cup of tea.
